Escapada exprés: 24 horas en Perelada

Una escapada exprés a Perelada nos permite disfrutar en apenas 24 horas de un combo de relax, gastronomía, vino, deporte, arquitectura, naturaleza, historia, arte y mucho más. En esta pequeña localidad del Empordà, (casi) todo gira alrededor de los vinos y cavas Peralada, cuya elaboración se puede conocer al detalle en su espectacular bodega, visita obligada para los amantes del vino y la arquitectura.

Lo mejor es alojarse en el Hotel Peralada Spa & Golf, un cinco estrellas en el que relajarnos en el spa, practicar golf y disfrutar de una oferta gastronómica ecléctica y solvente liderada por el chef Paco Pérez.

Pero esto no es todo. El Castell de Perelada es otro lugar de visita obligada, tanto si queremos pasear por sus  fastuosos jardines como disfrutar del casino, visitar su interior y conocer, entre otras cosas, su excepcional colección de cristalería. Por no hablar de su restaurante, Castell Perelada Restaurant, donde el chef Javi Martínez y el sommelier y jefe de sala Toni Gérez defienden una bien merecida estrella Michelin a base de creatividad, entusiasmo y territorio.

El hotel: Perelada Spa & Golf

Empezamos la jornada en el Hotel Perelada Spa & Golf, donde disfrutaremos de todo el confort de un cinco estrellas y donde todo empezará a ser fácil, como por arte de magia, desde el momento en que lleguemos allí. Si venimos del ritmo de la ciudad, aparcar el coche en su entrada, disfrutar del silencio y respirar aire puro ya nos hará bajar revoluciones. Sus habitaciones, amplias y confortables, son la antesala perfecta para una jornada de spa, que conviene culminar con una cena en el mismo hotel, del que no vamos a querer movernos tras la sobredosis de burbujas. Nada mejor que reservar en L’Olivera, el restaurante del hotel, donde Paco Pérez ha diseñado una oferta solvente y eficaz, pensada para satisfacer a todo tipo de paladares.

La de L’Olivera es una cocina entroncada en el territorio, ampurdanesa hasta la médula, en la que Pérez firma algunos de sus platos míticos (su croqueta de jamón, por ejemplo). Podemos optar por la carta, pero lo mejor es escoger un menú cerrado a 70 € que incluye una serie de entrantes como el salpicón de langostinos o una crema de setas, además de una carne o un pescado a elegir. Hay más espacios, desde el Garden Bar, donde disfrutar de una gastronomía sencilla al aire libre, o el wine bar The 19th.

Su bufet de desayuno es uno de los mejores que hemos probado. Ofrece prácticamente cualquier plato que se nos ocurra, además de una selección de pastelería artesana, embutidos y quesos de primera calidad, zumos naturales, yogures, cereales, platos calientes y una carta amplia con numerosas propuestas, entre ellas diversas opciones de huevos. Además, el café es delicioso.

Bodega Perelada

También es imprescindible visitar la bodega. Hay diferentes opciones para recorrerla, desde visitas privadas a combos que incluyen también el castillo o un paseo por algunas de las viñas más emblemáticas de Peralada. Este espectacular edificio fue diseñado por el prestigioso estudio de arquitectura RCR Arquitectes, ganadores del Prtizker 2017, y es la primera bodega de Europa con certificado LEED GOLD de sostenibilidad.

Quienes busquen una bodega convencional se sorprenderán al adentrarse en este edificio del siglo XXI, diseñado para transformar el proceso de elaboración del vino en una experiencia inmersiva única, emocionante y educativa. La recomendación es no revelar demasiados detalles: merece la pena descubrir su interior sin expectativas concretas. Eso sí, terminar la visita con una cata de los vinos y cavas de Perelada es imprescindible. Si se añade al recorrido una visita a las viñas cercanas, la experiencia será aún más completa y especial.

Castell Perelada

La siguiente parada es el emblema de Perelada: su icónico castillo. Este edificio imponente, que cuenta en su interior con numerosos puntos de interés, nos invita a pasar una mañana la mar de entretenida conociendo sus diferentes espacios. Uno de ellos es la biblioteca, imponente con sus techos altos y sus paredes cubiertas de libros, donde además de exposiciones temporales encontramos una colección única de ejemplares antiguos del Quijote.

Conviene también recorrer sus jardines si el tiempo lo permite, visitar el casino y acabar el paseo con una visita a la colección de cristalería que se ha ido forjando a lo largo de los años. Además, en sus diferentes salas podremos descubrir algunos utensilios antiguos, perfectamente conservados pese al paso de los años, que nos muestran cómo era la vida en la Edad Media. Un buen plan para hacer en familia, ameno y didáctico.

Castell Perelada Restaurant

La joya de la corona del castillo es su restaurante, Castell Perelada Restaurant, que cuenta con una estrella Michelin. Al frente, el chef Javi Martínez firma una carta inspirada en la tradición gastronómica de la zona, una propuesta que bascula entre la tradición y la vanguardia y mira en todo momento al mar y a los paisajes del Empordà. A su lado, el mâitre Toni Gerez se encarga de crear ese ambiente especial que reina siempre en la sala, cálido y cercano aunque ajustado a los cánones que marca la alta gastronomía. Su mítico carro de quesos justificaría por sí solo una escapada a Perelada.

Martínez cocina como los ángeles, siguiendo la estela de su predecesor Xavier Sagristà, que falleció en 2021. No hay mejor homenaje a un cocinero que el que Martínez hace día a día a Sagristà, en cada plato, en cada detalle, incluso en una manera muy particular de entender la gastronomía y, probablemente, también la vida. La cocina fresca y directa de Sagristà sigue presente a día de hoy en manos de Martínez. También la campechanía, esa manera casi militante de huir de discursos grandilocuentes para centrarse en cocinar los platos de siempre con las técnicas actuales y con la floritura imprescindible.
